VC Gourmet offers a variety of standard and custom entree options for any event or occasion. From single entree meals for simple get togethers to elaborate multi-course plated options including soups, salads and side dishes for formal affairs.

Standard Main Entrées

• Lasagna – vegetarian or meat

• Layered mostacolli

• Spaghetti with fresh tomatoes, basil and mozzarella

• Layered eggplant - like lasagna with no noodle

• Cut to order Baron of beef, turkey or ham

• Sauté to order - pasta or stir fry

• Chicken piccata, sautéed in a lemon butter sauce with capers

• Marinated slow roasted tri-tip

• Whole leg of lamb seared and finished with truffle butter

• Grilled filets of salmon with lemon butter sauce

• Steamed Jumbo Alaskan king crab legs served with a creamy beurre blanc sauce

• Seared Duck breast, with D.O.P. olive oil

• Briciole, stuffed flank steak slowly stewed in a traditional Italian red sauce, served with Romano cheese.

• Balsamic Chicken, sautéed with onions, mushrooms and grape tomatoes

• Spicy Beef with sticky rice garnished with avocado and cilantro (VC Personal Chef Specialty!)

• Grilled chicken quarters with a blend of spices and rice

• Grilled Jumbo Prawns with a Chile cilantro rub served on sugar cane skewers

• Broiled whole main lobster stuffed with tilapia, scallops, crab, and topped off with crispy clam strips

• Hickory smoked pork chops with braised greens

• Chicken and black bean soup with avocado salsa and cilantro

• French Onion soup with our home made croutons and Gruyere cheese

Salads

• Fresh watercress and endive with walnut-encrusted slices of goat cheese drizzled with passion fruit vinaigrette

• Crispy calamari and bell peppers tossed in a sweet and spicy Asian dressing

• Baby greens, candied pecans, tear drop tomatoes and segmented orange in a red wine vinaigrette topped with gorgonzola

• Capresa with D.O.P olive oil and aged balsamic vinegar

• Spinach, hard boiled egg, sautéed red onion with warm bacon vinaigrette

• Multi-color Cole Slaw with apple cider vinaigrette

• Lobster salad with mandarin oranges in a champagne dressing topped with caviar

• Traditional Hawaiian red potato salad

• Valarie’s salad, vine ripe tomatoes, cucumber, zucchini and thinly sliced green onion in a Chianti salt and olive oil dressing
